Scaled-Up Recipe (Double Batch)
Ingredients:

4-6 tbsp Sunflower Oil (or preferred Oil)

2 Large Onions, grated (or finely chopped)
-
2 Green Chillies, split lengthwise and deseeded (adjust for heat preference)

3 tsp Salt (or to taste)
-
8 tsp Ginger Paste (or 60g of peeled ginger, finely chopped)
-
20 tsp Garlic Paste (or 20 large cloves of garlic, finely chopped)

8 tsp (18g) Mrs Balbir Singh Amritsari Chana Masala Blend

60ml Water
-
720ml Passata (or Tinned Chopped Tomatoes)

4 tins Chickpeas (960g), drained
-
1 tsp Tamarind paste, or 2 tsp lime juice mixed with 2 tsp light brown sugar (optional)

360ml Water
-
2 tbsp Fresh Coriander Leaves, chopped for garnishing

Fresh Ginger, julienned for garnishing

Method:

In a large pot or pan, heat the oil, fry the onions, green chillies, and salt until slightly brown. Add the garlic, ginger, Mrs Balbir Singh's Amritsari Chana Masala blend, and water. Fry for another 6-7 minutes.

Add the tomatoes and stir for 3-4 minutes until fully blended. Add the chickpeas and cook on low heat for 8-10 minutes, gradually adding the water.

Add the tamarind paste (or lime juice and sugar mixture), simmer for 10 minutes, then stir in the Mrs Balbir Singh Original Garam Masala. Simmer with the lid on for a final 5-6 minutes.

Garnish with finely chopped fresh coriander, when you reheat a portion.
