INGREDIENTS
THE CHOPS:
- 8 Small-Medium Lamb Chops/Cutlets french-trimmed (Approx 500g)
FOR THE MARINADE:
- 8 Garlic Cloves, grated
- 15g Fresh Ginger, grated
- 115g Natural or Greek Yoghurt
- 6½ tsp (12g) Mrs Balbir Singh’s Masala Chops Blend†
- 1 tsp Lime Juice
- 1 tsp Salt
- Medium Onion (approx 60g), grated
FOR PAN STAGE:
- 2 tbsp Oil
GARNISH:
- 1 tbsp Fresh Coriander Leaves, chopped for garnishing
*Measurements refer to level measuring spoons
Step 1:
Flatten chops a little with meat hammer, and trim any extra fat if desired.
Step 2:
In a large bowl, mix together the marinade ingredients. Add the chops and mix until the chops are well coated. Leave to marinate in the fridge for 4 hours, or overnight.
Step 3:
Remove from the fridge and let the chops come down to room temperature. Heat oil in a large shallow pan and put the chops in. Cook covered on a medium heat for 6-7 minutes. Turn and cook uncovered for another 6-7 minutes.
Step 4:
Transfer chops onto a tray and place under a hot grill. Then grill for 4-5 mins or until you get a slight char.
