Behind the Blend: Shahi Chicken Masala

Shahi Chicken Masala

In the vibrant world of curry, few dishes capture the imagination quite like Shahi Chicken Masala. According to many food historians around the world Mrs Balbir Singh's version of this lavish, creamy delight has inspired one of the world’s most beloved dishes, Chicken Tikka Masala. Often touted as "the prototype", "inspiration for" and "the shape of things to come", Mrs Balbir Singh's Shahi Chicken Masala has its roots in the royal kitchens of the Mughal emperors, where flavour was crafted layer by layer, and opulence was key.

Many think it sits somewhere between a royal korma and a chicken tikka masala as it is most definitely more luxurious and indulgent than the latter. Its subtle layers and delightful depth of flavour making it instantly unforgettable.

Shahi Chicken Masala holds a very special place for us as the first blend we developed, and was included in our first foil-stamped gift box (The Original) - in terms of popularity it rivals our Butter Chicken, which can also be considered a highly elevated and original take on a standard restaurant 'tikka masala'.

At first bite, this simply stellar dish envelops the senses in its rich, smooth sauce. It is a curry that feels both familiar and yet extraordinary, inviting you to savour each morsel. Creamy, decadent and moreish, this dish calls for a slower pace, a feast for those who seek both comfort and complexity.

Shahi Chicken Masala's Mughal Origins

What gives Shahi Chicken Masala its royal charm? It starts with a blend of spices that Mrs. Balbir Singh’s recipe has perfected over generations. Each element adds something distinct, a reminder of its time-honoured origins. Coriander seed provides an earthy base, grounding the flavours with its subtle citrus undertones. Red chilli adds a kick that’s balanced rather than overwhelming, lifting the dish without stealing the spotlight. Black cumin lends a hint of smokiness that complements the richness of the cream, while green cardamom offers a sweet, floral note, enhancing the aromatic quality of the curry. The inclusion of peppercorn and bay leaf brings it all together, lending warmth and depth.

A Symphony of Spices

For a truly authentic experience, Mrs Balbir Singh’s Shahi Chicken Masala should be perfumed with her Original Garam Masala blend. This tin holds the final, essential touch to the dish, a finishing spice that enhances each ingredient's unique note, making the flavours sing... or indeed "Singh" as the case may be!

A regal, and now cult classic, Mrs Balbir SIngh's Shahi Chicken Masala isn’t just any old curry—it’s a joy-filled journey. Explore the recipe here and discover how a dish rooted in royalty has come to capture the hearts (and appetites) of so many.

Why not try Shahi Paneer also? For a superb change, or for those who prefer a vegetarian option, you can make one of India's most popular curries, Shahi Paneer, by swapping out the chicken for cubes or chunks of paneer (available in blocks of 200g upwards in most supermarkets).

The blends to make this wonderfully iconic dish are also available in a number of our favourite collections and gift boxes.
