In an article recently published in SAVEUR magazine, food writer Devra Ferst interviewed the gracious Madhur Jaffrey at her Manhattan apartment, about her required reading on Indian cooking and the history of Indian food.

Before becoming the star we know today, she recounts how Mrs Balbir Singh's Indian Cookery was the very first cookbook that she bought, around the same time as also buying Julia Child's Mastering the Art of French Cooking.

Speaking about Mrs Balbir Singh, Jaffrey states "She had the most authentic recipes", and that her recipes "tasted exactly how they should".
